Low Calorie Pumpkin Cookies (Vegan)

Ingredients

  • 1 C canned pumpkin (not the pumpkin pie mix)
  • 1/2 C applesauce
  • 1 t vanilla
  • 1/2 C brown sugar
  • 1/2 C sugar
  • 1 C wheat flour
  • 1 C flour
  • 1 t baking soda
  • 1 t baking powder
  • 1 t cinnamon
  • dash of ground cloves
  • dash of ginger
  • dash of nutmeg

Preparation

Step 1

Step 1: Preheat oven to 350. Mix the first five ingredients (pumpkin, applesauce, vanilla, brown sugar, and sugar) in a bowl until well mixed.

Step 2: Combine the rest of the ingredients in a separate bowl and then add to the pumpkin mixture. Mix well.

Step 3: At this point, it’ll be more of a batter like consistency instead of a cookies dough, but that’s ok. Plop cookie sized globs onto a greased cookies sheet and bake at 350 for 18 minutes.
