Tortilla Soup

  • 1 can tomatoes
  • 1 can rotel
  • 4 Tbsp garlic powder
  • 4 Tbsp cumin
  • 2 Tbsp vegetable oil
  • 1 large onion
  • 4 cans of chicken broth (or you can use the water from the cooked chicken with the bouillon cubes)
  • 1 box Velveeta cheese
  • 2 cans of cream of chicken soup
  • 16 oz tub of French onion dip
  • 5-6 chicken boneless chicken breasts
  • salt and pepper if needed



Step 1

Combine 1 can of tomatoes, rotel, garlic powder, cumin, vegetable oil, and onion in pan. Bring to a boil for 10 minutes stirring constantly.

Add 4 cans or cups of chicken broth and boil 10 more minutes (I use broth from the boiled chicken and bouillon cubes)

Add cooked shredded chicken

Cut 1 box of Velveeta cheese in cubes and add to soup to melt

Add 2 cans of cream of chicken soup and a 16oz French Onion Dip and salt and pepper if needed

Simmer for 20 minutes

Pour soup over Tortilla chips and top with Grated cheese
