Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 2 tablespoons EVOO
  • 2 15 ounce cans chickpeas, rinsed
  • 1 6 ounce package spinach
  • 2 tablespoons tomato paste
  • 2 teaspoons curry powder
  • Plain yogurt

Preparation

Step 1

In large skillet, cook onion and garlic in EVOO over medium 5 minutes. Add next 4 ingredients and 1/3 cup water; cook 2 minutes. Season. Top with yogurt.
