Cassatta Cake

This cake is mainly done by taste, sweetness depends on you! I quesstimated ingredients.

Ingredients

  • 2 Angle food cakes
  • 3 lb whole milk ricotta
  • Approx 1 lb confectionary sugar
  • 1-2 lb Hershey's milk chocolate bar (save some to make chocolate curls for top of cake)
  • finely ground walnuts
  • 2 c heavy cream

Preparation

Step 1

Whip the cheese in Cuisinart till smooth and sweeten to taste with sugar. Blend in Cuisinart. Transfer to large bowl. Add chocolate shavings, ground nuts..again, to your own taste. Snugly layer sides and bottom of medium bowl (or you can use a loaf pan) depending on what look you want, with thinly sliced cake pieces, making sure there are no gaps. Put a layer of cheese filling over first layer about one inch thick. Continue layering finishing with a final layer of cake. Cover bowl with foil and refrigerate overnight. Turn cake over onto a decorative plate and generously frost with freshly whipped cream. Top with chocolate curls and maraschino cherries.
