Delmonico Potatoes

  • 6 potatoes, peeled and boiled
  • 1 1/2 cups White Sauce (p. 274)
  • Pinch of cayenne pepper
  • Salt to taste
  • 2 egg yolks, slightly beaten
  • 1/2 cup grated mild Cheddar cheese
  • 1 cup buttered bread crumbs

Preparation

Step 1

Preheat the oven to 375. Butter a 2 qt. casserole. Slice the potatoes 1/4 inch thick. Make the white sauce and stir in he cayenne pepper, salt, egg yolks, and cheese. Stir over medium heat until the cheese melts. Spoon a film of sauce over the bottom of the casserole and place a layer of potatoes over it. Continue alternating sauce and potatoes, finishing with sauce, Sprinkle the buttered crumbs on top and place in the oven. Bake for 20-25 minutes or until the sauce is bubbling.
