Dijon mustard

Ingredients

  • 1 cup of mustard powder (made from grinding brown and/or yellow mustard seeds)
  • 3 cloves of garlic, minced
  • 1 large onion, chopped
  • 3 tablespoons of honey
  • 2 cups of dry white wine
  • 1 tablespoon of vegetable or canola oil
  • 2 teaspoons of salt

Preparation

Step 1

Heat a saute pan and add the wine, minced garlic, and chopped onion. Simmer the ingredients for about 5 minutes, then let the mixture cool.

Throw out the solid components, holding onto the liquids. Next, add the powdered mustard to the liquid, mixing until combined. Return the pan to the heat, and incorporate the honey. Let everything cool in your cookware (you can leave it at room temperature overnight), then pour into a canning jar. Refrigerate your mustard for two to eight weeks if you want it to have a delicious aged flavor
