Bran Bread

Ingredients

  • 1 egg
  • 1 tsp. baking soda
  • 1 c. all bran
  • 1 c. quick oatmeal
  • 1 c. whole wheat flour
  • 1 c. sugar (can sub 1/2 c. sugar with 1 individual applesauce cup)
  • 1 c. lowfat buttermilk (can sub 1 T vinegar or lemon juice plus milk to make 1 cup)
  • 1 tsp. cinnamon (opt)

Preparation

Step 1

Beat egg & baking soda (I prefer to add baking soda to dry ingredients – it blends better that way). Mix all bran, oatmeal, flour, sugar, applesauce and buttermilk. Add egg mixture. Put in greased pan and bake at 350 for approx 45 minutes (I check after 30 min and cover w/ foil).
