Santa Fe Chicken Pita

Ingredients

  • 1 c. canned premuim chunk white chicken, drained, cut into bite size pieces
  • 1 c. drained, rinsed black beans
  • 1 c. frozen yellow sweet corn, thawed
  • 1 c. chopped red bell peppers
  • 1/4 c. sliced green onions, bulb and tops
  • 1 c. salsa (fresh or bottled)
  • 6 pita breads, halved crosswise

Preparation

Step 1

Lightly toss together all ingredients except pita bread. Split pita bread halves to form pockets. Fill pockets with chicken filling. Garnish with salsa and ranch dressing, as desired.
