Ingredients

  • 16 oz pkg. Navy beans
  • 2 quarts water
  • 1-2 smoked ham hocks
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/4 tsp black pepper
  • 1 tsp nutmeg
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp salt

Preparation

Step 1

Soak beans as directed below.
Combine beams, water and ham hocks in a large deep pot. Simmer, covered, for 1 1/2 hrs. Remove 1 cup of beans, place in a small bowl and mash well. Remove ham hocks and trim meat off the bones. Return the mashed beans and ham to pot; add remaining ingredients. Simmer an additional 20-30 minutes until beans are tender and soup has thickened.

Overnite soak: Place rinsed beans in large pot. Add enough water to cover the beans by 2 inches. Let soak overnite or at least 6-8 hrs. Drain and continue with recipe above.

Quick soak: Place beans in large deep pot. Add enough water to cover by at least 2 inches. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 hr. Drain and continue with recipe above.
