Sausage Stuffed Manicotti

Ingredients

  • 10 uncooked manicotti
  • 1 lb sweet turkey Italian sausage
  • 1 1/2 cup chopped onion
  • 1 cup chopped green pepper
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1/8 tsp black pepper
  • 1 1/2 cups mozzarella cheese
  • 2 cups tomato-basil pasta sauce
  • 1/4 cup grated Parmesan cheese

Step 1

Cook pasta according to directions on package.

Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Remove the casings from the sausage and add the sausage to the pan. Cook for 5 minutes or until browned, stirring to crumble. Add the onion and bell pepper to the pan and saute 5 minutes until tender.

Melt the butter in a medium saucepan over medium heat. Stir in the flour and cook 2 minutes stirring constantly with a whisk. Remove from the heat and gradually stir in the milk. Return the pan to the heat and bring to a boil. Cook for 6 minutes or until thickened, stirring constantly. Remove from the heat and stir in the black pepper. Add 1/2 cup of the milk mixture to the sausage mixture and stir well.

Preheat the oven to 350 degrees.

Spoon about 1/3 cup of the sausage mixture into each manicotti. Arrange the manicotti in a single layer in a 13x9 baking dish coated with cooking spray. Sprinkle mozzarella over the manicotti and spread the remaining sausage mixture over the mozzarella. Top the sausage mix with the pasta sauce, spreading to cover. Sprinkle with Parmesan.. Bake for 35 minutes or until bubbly.
