Coconut-Ginger Rice

Ingredients

  • 1 cup canned unsweetened coconut milk, well-stirred
  • 1 cup chicken or vegetable broth
  • 1 cup long-grain white rice
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon finely minced cilantro
  • Dash of salt

Preparation

Step 1

In a 2-quart saucepan, bring the coconut milk, broth, and rice to a boil. Reduce the heat to low and cover pot.

Simmer, covered, for 15 to 20 minutes, until all the liquid has been absorbed and the rice is tender.

Add the ginger and cilantro, fluff with a fork, and cover the pot again. Let the rice stand for 5 minutes while the flavors come together.

Add salt to taste before serving.
