  • 1 pound baby spinach leaves
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chopped garlic (3 cloves)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • Lemon
  • Sea or kosher salt (optional)

Step 1

1. Rinse the spinach well in cold water to make sure it's vey clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves..

2. In a large pan, heat the olive oil and sauté the garlic over medium heat for about a minute, but do not let it brown.

3. Add all the spinach, the salt and pepper to the pot, toss it with the garlic and oil, cover the pot and cook it for 2 minutes.

4. Uncover the pot, and stir the spinach with a wooden spoon, until all the spinach is wilted.

5. Remove spinach to a platter and sprinkle with a squeeze of lemon juice and kosher salt.

6. Serve hot.
