Ingredients
- 1/2 C butter, softened
- 1 C granulated sugar, plus additional for rolling
- 1/2 C canned pumpkin
- 1/4 C molasses
- 1 egg
- 1 tsp vanilla extract
- 2 1/2 C all-purpose flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp allspice
- 1/2 tsp ground cloves
- 1/2 tsp salt
Preparation
Step 1
In a large bowl or stand mixer, cream together butter and sugar. Add pumpkin, molasses, egg and vanilla. Mix until just combined.
Combine dry ingredients in a separate bowl. Slowly add to wet mixture. Mix until fully combined.
Preheat oven to 350 degrees. Prepare baking sheet with parchment paper or silicone baking mat.
Add 1/4 cup granulated sugar to a small bowl. Roll golfball size pieces of dough in sugar until fully coated, then transfer to your prepared baking sheets. Space cookies at least 2 inches apart.
Bake for 11-12 minutes or until just golden on the bottom.
