Raspberry Oat Yogurt Muffins

Ingredients

  • 1 cup quick-cooking oats, uncooked
  • 1/2 cup brown sugar, packed
  • 1 cup vanilla or plain yogurt
  • 1/2 cup oil
  • 1 egg, beaten
  • 1 cup flour
  • 1 tea. salt
  • 1 tea. baking powder
  • 1/2 tea. baking soda
  • 1 cup raspberries or other fruit, finely chopped

Preparation

Step 1

In a bowl, combine oats, brown sugar, yogurt, oil and egg. Beat well; let stand 5 minutes. Sift in flour, salt, baking powder, and baking soda. Before stirring, sprinkle fruit over flour mixture. Stir to blend.

Fill greased muffin cups 2/3 full, Bake at 400 degrees for 20 minutes.
