Ingredients

  • 2 cups Dry Pasta, I prefer egg noodles
  • 1 pound Ground Turkey
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Black Pepper
  • 1 cup Salsa
  • 3 cups Shredded Pepper Jack Cheese
  • (optional)
  • 1 Fresh jalapeno or other pepper, depending on how spicy you want it.

Preparation

Step 1

Preheat oven to 350 F. Grease/spray an 8-inch baking dish.

Prepare pasta according to box instructions, drain and set aside.

In a skillet over medium heat, brown ground turkey with salt/pepper. Stir in salsa and let it simmer for 5 minutes.

Layer half each of the cooked pasta, meat and cheese into the dish. Repeat layers. Bake uncovered for 25-30 minutes or until bubbly.

Serve topped with lettuce, sour cream and salsa.
