Acini Di Pepe Pineapple Salad

Ingredients

  • 1 c acini de pepe macaroni
  • 11 oz can mandarin oranges
  • 20 oz can crushed pineapple
  • 1 c sugar
  • 2 T flour
  • 3 eggs
  • 1 c mini marshmallows
  • 8 oz cool whip

Preparation

Step 1

Cook macaroni and cool
Drain oranges and pineapple, save juice
Mix sugar with flour
Add 1/2 juice, add eggs and blend well the remaining juice.
Cook like pie filling, boil gently until it makes eyes, then a few more minutes (3)
Stir a bit to cool and fold in macaroni and then fruit.
Let set overnight
ADd marshmallows and Cool Whip
Refigerate
