Ingredients
- 1/3 cup light garlic and herb spreadable cheese (Boursin)
- 1/4 cup slivered almonds, toasted, chopped, divided
- 4 skinless, boneless chicken breast halves (6oz ea)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 tsp butter

Step 1
Combine cheese and 3 tbsp almonds, set aside. Cut horizontal slit through thickest part of each breast half to form a pocket, stuff with 1 1/2 tbsp almond mix, secure with toothpick, sprinkle with salt and pepper. Heat butter in lg nonstick skillet over med heat, add chicken, cook 6 min each side until done, remove from pan, cover and let sit 2 min. Top with remaining 1 tbsp almonds....
