  • 2 tbsp olive oil
  • 1/3 lb raw mexican chorizo, casings removed
  • 4 - 6 inch corn tortillas, torn into bite-size pieces
  • 1 med onion, chopped
  • 1 jalapeno, seeded and chopped
  • 2-3 garlic cloves, finely chopped
  • 8 eggs, lightly beaten
  • hot sauce
  • salt & pepper
  • 2 plum tomatoes, diced
  • 1 ripe avocado, diced
  • juice of 1 lime
  • 1 cup shredded smoked cheddar or Monterey jack cheese
  • 1/2 cup sour cream

Step 1

Heat 2 tbsp olive oil in lg skillet over med-high heat, add chorizo, cook, breaking up until crispy- 4-5 min. Add torn tortillas, cook until crispy- 4-5 min. Add onions, jalapenos and garlic, cook 5-6 min. Once veggies are tender, add eggs and hot sauce, cook until almost done, season with salt and pepper and stir in tomatoes, avocado, lime juice and cheese, finish scrambling, top with sour cream...
