Caramel Apple Cake with Caramel Topping (from Paul Dean & Swan House)

This is another recipe that I first learned of at the tea shop where I work & help out occasionally. Everything served there is SO tasty.

Ingredients
- Topping:
- 2 1/2 C sugar
- 3 eggs
- 1/2 C veg. oil
- 3 C all purpose flour
- 2 tsp. vanilla
- 2 1/2 C diced apples
- 3/4 C butter
- 2 C brown sugar
- 1/4 C milk

Preparation
Step 1
1. Lightly grease and flour 13x9" baking pan.
2. Preheat oven to 350.
3. Cream together sugar, eggs, and oil. Add flour; mix together until well blended; Add vanilla, nuts, and diced apples.
4. Spread into pan; bake for 45 min. to 60 min. cake is done when toothpick inserted in center comes out clean.
5. When cake is done, punch holes in it with a knife and pour topping over it.
6. For topping, heat all ingredients together over medium heat. Bring to a boil, stirring constantly; let boil for about 2 min. Pour over warm cake.
