Mexican Lasagna

Mexican Lasagna 1 Picture


  • 1 lb. ground turkey (or beef)
  • 1 (16 oz) can refried beans
  • 1 (16 oz) jar chunky salsa
  • 1 small can black olives, sliced
  • 2 cloves garlic, finely chopped
  • 1 medium onion, chopped
  • 2 teas. oregano
  • 1/2 teas. red pepper flakes
  • 1 pkg. corn tortillas, cut in 1/2
  • 2 cups shredded cheddar cheese or 4 cheese blend



Step 1

Saute onions and garlic in non-stick pan with a small amount of canola oil. Add ground turkey and cook until browned. Add refried beans in small amounts and mix thoroughly. Add 1/2 of the salsa, olives, oregano and red pepper flakes and mix well. Lay tortillas on bottom of 9x12 or 9x13 pan to cover, overlap as needed. Spread 1/2 of mixture on tortillas, cover with remaining salsa and sprinkle with cheese. Add next layer and top with cheese. Bake at 350* for 25-30 minutes until heated through.
