I'm a big fan of pellet grill cooking. Found this on the Traeger site. Subscribe to their weekly recipes for more like this. If you don't have a pellet grill you can adapt to your own style.

Ingredients

  • 1 6-8 lb. brisket
  • 1/8 cup coffee grounds
  • 1/4 cup Prime Rib Rub

Preparation

Step 1

Start your grill and bring to 180 degrees.

Rub brisket with the rub and coffee grounds. Place on grill grate and smoke at 180 degrees for 3 hours.

Remove brisket and then turn grill to 275 degrees, double wrap brisket in foil, return it to grill and let it cook for 3.5 to 4 hours - until the internal meat temp. reaches 190 degrees.

Once it is finished remove from grill, unwrap it and let rest for ten to fifteen minutes. Cut and serve.

Tip: remember to cut your meat against the grain as it will be much more tender.
