Basil-crusted Roast Pork

Ingredients
- 2 pounds boneless loin of pork
- 1 clove of garlic, crushed
- 2 tablespoons dijon mustard
- 2 tablespoons soy sauce
- 1/8 teaspoon ground ginger
- 1 1/2 tablespoons chopped fresh basil or 1 teaspoon dried
- 1 cup fresh breadcrumbs
- 1/4 teaspoon salt
- 1 onion quartered
- 1 carrot, quartered
- 1 cup water
- chopped fresh parsley

Preparation
Step 1
Wipe pork dry with paper towel. Combine garlic, mustard, soy sauce, ginger, basil, bread crumbs, salt and pepper in a small bowl. Mash together into a paste. Coat meat well; let stand 1 hour.
Heat oven to 375. Place onion, carrot and water in bottom of a roasting pan. Place pork on a rack in roasting pan. Roast in oven 30 minutes. Reduce heat to 350 degrees; cook 1 hour longer adding more water to pan if necessary. Let meat stand 10 minutes. Sprinkle with parsley before serving.
