Turkey-Bacon Turnover with Tomato-Avocado Salad

Ingredients

  • 8 oz smoked deli turkey, sliced thin
  • 4 slices Swiss or Cheddar cheese
  • 4 strips cooked bacon
  • 1 sheet thawed puff pastry
  • 4 tsp Dijon mustard
  • 1 egg blended with 1 tsp water
  • salt
  • 1/4 cup white wine vinegar
  • 2 tsp sugar
  • salt and pepper to taste
  • 1 cup halved cherry tomatoes
  • 1 ripe avacado, peeled, pitted, and sliced
  • 1/4 cup sliced scallions

Preparation

Step 1

Preheat oven to 400 degrees. Line a sheet pan with parchment.

Prepare turkey, cheese, and bacon. Roll the pastry to 11" square. Cut into 4 squares and spread each with 1 tsp of mustard. Arrange the turkey, bacon, and cheese on half of each pastry square, tearing or folding them to fit. Brush the edges of the pastry with the egg wash and fold to form a triange. Seal the pastry shut with the tines of a fork. Place the turnovers on the sheet pan, brush with more egg wash and sprinkle with kosher salt.

Bake for 25 min, or until pastry is golden and crisp.

Stir the vinegar, sugar, salt, and pepper together in a bowl. Add the remaining ingredients and toss gently to combine.

Serve turnover warm with tomato salad.
