Dad's Quick Bagel Omelet Sandwich Recipe

Ingredients

  • 1/4 cup finely chopped onion
  • 1 tablespoon butter
  • 4 eggs
  • 1/4 cup chopped tomato
  • 1/8 teaspoon salt
  • 1/8 teaspoon hot pepper sauce
  • 4 slices process American cheese
  • 4 slices Canadian bacon
  • 4 plain bagels, split

Preparation

Step 1

In a large skillet, saute onion in butter until tender. Whisk the eggs, tomato, salt and pepper sauce. Add egg mixture to skillet (mixture should set immediately at edges).

As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, top with cheese. Reduce heat; cover and cook for 1-2 minutes or until cheese is melted. Meanwhile, heat bacon in the microwave and toast bagels if desired.

Cut omelet into fourths and serve on bagels with bacon. Yield: 4 servings.
