Preparation
Step 1
Lightly coat 2 qt rectangular baking dish with cooking spray. Cover bottom of dish with bread slices, cutting to fit.
In medium bowl, whisk together eggs, chili peppers, and black pepper until well mixed. Pour eggs evenly over bread. Sprinkle with canadian bacon or ham. Top with tomato slices and cheese. Cover and refridgerate 4 to 24 hours.
Preheat oven to 350. Bake uncovered for about 25 minutes. Sprinkle with cilantro.
