Chipotle Cornbread

Ingredients
- 1/4 cup butter, room temperature
- 2 tbsp minced chipotle peppers
- 1 1/3 cup flour
- 1 cup yellow cornmeal
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup sugar
- 1 egg
- 1/2 cup buttermilk
- 3/4 cup milk

Step 1
1. Preheat oven to 350 degrees. Lightly grease a 9" round pan.
2. Put the butter and the peppers into a bowl. Microwave until butter is melted.
3. In a large bowl, whisk together flour, cornmeal, baking soda, salt and sugar.
4. Make a well in the center of the dry ingredients and add egg, buttermilk and milk. Whisk until almost combined, then add butter-chipotle mixture and stir just until no streaks of dry ingredients remain.
5. Spread batter in prepared pan.
6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
7. Turn the bread out onto a wire rack and cool completely.
