Ingredients

    tiny new potatoes, halved or quartered ( I usually leave out & serve pot separately)

  • 1 1/2

    c baby carrots

  • 1

    small onion cut into wedges

  • Seasoning

  • 1/4

    c olive oil

  • 3

    T lemon juice

  • 3

    cloves garlic

  • 1

    t oregano

  • 1/2

    t salt

  • 1/4

    t salt

  • 1/4

    t pepper

  • 1/2

    small eggplant & cut into 1/2 inch pieces

  • 1

    red pepper cut into 1/2 inch wide strips

Directions

Combine new potatoes, baby carrots and onion in ungreased 13 x 9 baking pan. For seasoning - combine olive oil, lemon juice, garlic, oregano, salt and pepper. Drizzle over vegetables. toss gently to coat. Bake in 425 convection oven for 20 minutes, stirring once. Remove from oven. Add eggplant and peppers. Toss. return to oven. Bake 13 - 15 minutes more, stirring once.
