Ingredients
- 1 1/3 finely crushed Nillas
- 1 cup sugar, divided
- 1/4 cup butter, melted
- 1 tsp grated lemon peel
- 2 eggs
- 1/4 cup lemon juice
- 2 TB flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup coconut
Preparation
Step 1
Preheat oven to 350. Mix crumbs, 1/4 cup sugar, and butter until well blended. Press into 8x8 pan. Bake 8 minutes.
Beat eggs and 3/4 cup sugar in small bowl with wire wisk until thick and well blended. Add rest of ingredients except coconut. Mix well. Pour over crust and top with coconut.
Bake 25-30 minutes or until center is set and top is lightly browned. Cool completely. Cover and refrigerate several hours. Cut into 20 squares. Store tightly covered in refrigerator.
