Chicken Parmigiana With Beefsteak Tomato Sauce

Ingredients

  • 2 servings cooking spray (5 one-second sprays per serving)
  • 2 1/2 packets uncooked instant oatmeal - (1 oz ea)
  • 2 teaspoons dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon table salt
  • 1/4 teaspoon freshly-ground black pepper
  • 1 pound uncooked boneless skinless chicken breasts four 4-oz pieces
  • 1 cup canned tomato sauce
  • 1 large beefsteak tomato cored, diced
  • 1/4 cup chopped fresh basil
  • 4 ounces Kraft Free Shredded Mozzarella Cheese (or other brand)

Step 1

Preheat oven to 400 degrees. Coat a large baking sheet with cooking spray.

Combine oats, 1 teaspoon of oregano, garlic powder, onion powder, salt and pepper together in a shallow dish. Add chicken to oat mixture and turn to coat both sides, pressing oat mixture onto chicken with your hands. Place chicken on prepared baking sheet and lightly coat surface with cooking spray; bake 20 minutes.

Meanwhile, in a medium saucepan, combine tomato sauce, tomato and remaining teaspoon of oregano. Set pan over medium heat and bring to a simmer. Simmer 10 minutes; remove from heat and stir in basil.

Remove chicken from oven (keeping oven at 400 degrees) and top each chicken breast with 1/4 cup of sauce and 1/4 cup (1 ounce) of cheese. Return pan to oven and bake until cheese is melted and golden, about 7 to 10 minutes more.

This recipe yields 4 servings; 1 piece per serving.
