Ingredients
- 1 lb. boneless skinless chicken thighs
- 1/2 teaspoon crushed garlic
- 1/2 teaspoon ground sage
- 1/2 teaspoon black pepper
- 1 lb. apples, cored and sliced into wedges
- 1 medium onion, sliced into wedges
- 1/4 teaspoon ground nutmeg
- 1/4 cup coarsely chopped pecans
- 1/4 cup grated Parmesan cheese
Preparation
Step 1
Preheat oven to 400 degrees
Coat a large pan with cooking spray. Rub chicken with garlic & sage. Sprinkle with salt & pepper, then place in pan.
Toss apple and onion wedges with nutmeg and arrange around chicken. Sprinkle pecans on top. Bake for 35 minutes or until chicken reaches 165°F.
Remove from oven, sprinkle with Parmesan, serve.
Serving Suggestion: Serve with wild rice blend and a green vegetable.
