Ingredients
- One whole chicken, or three breasts if preferred.
- 1 tablespoon olive oil
- One half stick cinnamon, or one half teaspoon ground cinnamon
- One good handful fresh sage leaves
- Zest of two lemons
- 10 cloves garlic, skin left on
- 1 1/2 cups milk

Step 1
Preheat oven to 375°.
Use a snug fitting pot for the chicken. Fry it in the olive oil turning the chicken to get an even color all over, until golden.
Add the rest of the ingredients to the pot, and cook in the preheated oven for one and a half hours. The lemon zest will sort of split the milk, making a sauce which is absolutely fantastic. To serve, pull the meat off the bones and divide it into your plates. Spoon over plenty of the juice and the little curds. Serve with a wilted spinach or greens and some rice or mashed potatoes.
