Meringue Cookies

  • 2 egg whites
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon cream tartar
  • 1/8 teaspoon salt
  • 1/4 teaspoon food coloring
  • 1 6-ounce package chocolate chips

Preheat oven to 300°. Cover cookie sheets with aluminum foil or parchment paper. Add salt to egg whites and beat on high until foamy. Add cream of tartar, food coloring (green or red) and vanilla while beating. Beat until very thick. Add sugar, tablespoon at a time, and beat until mixture is smooth, thick and holds peaks. Fold in chocolate. Drop by spoonful onto prepared cookie sheets and bake 20 -25 minutes or until cookies lift off cleanly.
