Spinach Salad "Hot" with Goat Cheese

Ingredients

  • 1 6-oz pkg portobella mushrooms, sliced
  • 1/2 med onion
  • 1/4 cup olive oil
  • 1/4 cup Greek olives
  • 8 cherry tomatoes, sliced
  • 3 T balsamic vinegar
  • 1 bunch fresh spinach, stemmed
  • 1/4 cup goat cheese
  • salt and pepper to taste

Preparation

Step 1

Saute mushrooms and onions in olive oil until tender. Add olives, tomato slices, and vinegar. Cook over low heat 10-15 minutes.
Place spinach on a serving platter. Top with pats of goat cheese. Pour mushroom mixture over the top. Season with salt and pepper and extra balsamic vinegar to taste. Serve immediately.
