Baked Mushroom Rice

Ingredients

  • 1 tablespoon olive oil
  • 1 cup cremini mushrooms, sliced
  • 1 cup medium-grain white rice
  • 1 1/2 cup nonfat chicken broth
  • 1/4 teaspoon salt

Preparation

Step 1

1. Heat oven to 400.

2. Heat oil skillet. Add mushrooms; sauté 5 mins.

3. Stir in rice, broth and salt; bring to a boil.

4. Wrap handle of skillet with foil; cover and bake 20 mins. Uncover; let stand 3 mins.

Notes: Great accompaniment for a complex entree
