Crispy garlicy oven chicken breasts

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 cups or so buttermilk
  • bread crumbs or 2 cups home made croutons
  • rub o love and pepper and salt
  • 1/2 stick butter and large slug of evo
  • 1 sliced lemon
  • handful parsley- chopped
  • minced fresh garlic- a full bulb's worth
  • 1/3 cup grated parm or pecorino romano cheese

Step 1



add chicken breasts and buttermilk with seasoning in baggie. Zip and marinate at least 1 hour, better over night.
Pre heat oven to 350
whiz home made croutons with fresh parsley, parm cheese, some of the minced garlic and spices in food processor. Place in pie pan
melt the butter (1/2 stick) with evo in microwave. Stir in garlic
brush the black iron skillet with a bit o melted butter mixture
remove chicken from buttermilk and sprinkle with Rub o Love or other seasoning. Discard marinade. Coat chicken fully with crumb mixture.
Place coated chicken in skillet, tuck sliced lemon around. OK to Squeeze a bit of lemon on chix first.. pour the rest of the butter mixture over chix. Place in oven for 30 minutes. Turn chix over and bake 20 or so minutes more or until cooked through. Sprinkle with fresh chopped parsley
