Ingredients
- 1/2 lb boneless chicken breast
- 1 pkg wild rice
- 1/2 c. scallions, chopped fine
- 1/2 c. raisins or craisins
- 1 julienned carrot, for color
- 1/4 c. olive oil
- 1/2 c. white wine vinegar
- 1 1/2 tbls Dijon mustard
- 2 cloves garlic, chopped
- 1 1/2 tsp salt
Preparation
Step 1
Prepare wild rice as directed on pkg.
Cut chicken breast into bite-size pieces and boil 3-4 min.
Mix remaining ingredients; combine with rice and chicken (may save liquid on side to add).
