Chicken and Wild Rice Salad

Ingredients

  • 1/2 lb boneless chicken breast
  • 1 pkg wild rice
  • 1/2 c. scallions, chopped fine
  • 1/2 c. raisins or craisins
  • 1 julienned carrot, for color
  • 1/4 c. olive oil
  • 1/2 c. white wine vinegar
  • 1 1/2 tbls Dijon mustard
  • 2 cloves garlic, chopped
  • 1 1/2 tsp salt

Preparation

Step 1

Prepare wild rice as directed on pkg.
Cut chicken breast into bite-size pieces and boil 3-4 min.
Mix remaining ingredients; combine with rice and chicken (may save liquid on side to add).
