Bruschetta

Ingredients

  • 2 large tomatoes, coarsely chopped
  • 1/2 sweet onion, chopped
  • 2 tbsp. olive oil
  • 1 tbsp. chopped fresh oregano
  • 1 tsp. chopped fresh basil
  • 2 tsp. chopped fresh parsley
  • 1/2 loaf Italian bread, cut into 1-inch slices
  • 1/4 c. freshly grated Parmesan cheese

Preparation

Step 1

1. Preheat oven to 400 degrees F

2. In a medium bowl, combine the tomatoes, onion, olive oil, oregano, basil and parsley. Place the bread on a baking sheet and top with tomato mixture. Sprinkle with Parmesan.

3. Bake for 8-10 min, or until the bottom of the bread is browned. Allow to cool 5 min before serving.
