Ingredients
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. mayonnaise
- 2 tsp. minced fresh garlic
- 1/2 tsp. anchovy paste
- 1/4 tsp. Worcestershire sauce
- 1/4 cup olive oil
- 1/3 cup grated Parmesan
- Salt and black pepper to taste
- 8 cups chopped romaine lettuce
- Shaved Parmesan
Preparation
Step 1
Whisk together lemon juice, mayonnaise, garlic, anchovy paste, and Worcestershire. Drizzle in oil, whisking constantly. Whisk in grated Parmesan; season with salt and pepper.
Toss romaine with enough dressing to coat. (Remaining dressing may be chilled for up to 1 week.) Garnish servings of salad with shaved Parmesan.
