Squash Soup

Ingredients
- 1 med onion, finely chopped
- 4 T butter
- 2 T flour
- 1 tsp salt
- dash pepper
- 1/2 tsp nutmeg
- 1 (14 oz) can chicken broth
- 1 cup milk
- 1 1/2 cups cooked yellow squash
- 2 tsp Worcestershire sauce
- 1 egg yolk, lightly beaten
- 1/2 cup heavy cream

Preparation
Step 1
Saute onion in butter oer medium hi heat for 5 minutes or until softened. Blend in flour, salt, pepper, and nutmeg. Stir until bubbly.
Remove from heat. Stir in broth and milk. and Squash and Worcestershire sauce. Mix egg yolk and cream together, then add to soup. Heat until hot...DO NOT BOIL. Serve immediately.
