Ingredients
- 1-1/3 cup flour
- 3/4 cup quick-cooking oats
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 egg
- 3/4 cup milk
- 1/4 cup cooking oil
- 1 cup frozen blueberries
- Powdered sugar icing
Preparation
Step 1
Grease an 8”x1-1/2” round baking pan. In a medium bowl, stir together flour, oats, sugar, baking powder and salt. In a small bowl, stir egg, milk and oil. Add all at once to dry mixture. Stir until moistened (batter will be lumpy). Fold in blueberries. Spoon
batter into pan. Bake at 400F. for 20-25 mins on until toothpick comes out clean. Cool in pan on wire rack for 5-10 mins. Drizzle cake with icing.
Icing: In a small bowl, stir together 1/2 cup sifted powdered sugar and enough milk (2-4 tsp.) to make drizzling consistency.
