Ingredients
- 3/4 cup orzo
- 1 teaspoon olive oil
- 1 cup tomato, diced
- 3/4 cup scallion, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 pound shrimp, peeled and deveined
- 1/4 cup basil leaf, chopped
Preparation
Step 1
1. Preheat oven to 450.
2. Spray inside of foil oven bag. Place on baking pan.
3. Cook orzo 5 minutes. Toss with oil, tomato, scallion, feta, lemon zest and juice, salt and pepper. Place in bag. Mix shrimp and basil. Place on top of orzo. Seal bag. Bake 25 minutes.
