Ingredients
- 1 serving cooking spray (5 one-second sprays per serving)
- 1 small white onion finely chopped
- 1 average jalapeño pepper cored, seeded, and minced (do not touch seeds with bare hands)
- 1 medium garlic clove minced
- 1 1/4 pounds large shrimp peeled, deveined, and tails removed
- 3 medium tomatoes cored, diced
- 1/2 teaspoon table salt
- 1/4 teaspoon freshly-ground black pepper
- 1 tablespoon fresh lime juice
- 2 teaspoons munced fresh cilantro

Preparation
Step 1
Coat a 12-inch nonstick skillet with cooking spray. Add onion, jalapeño and garlic. Sauté over medium-high heat for 2 minutes. Add shrimp and sauté 1 minute, stirring frequently.
Add tomatoes, salt and pepper. Reduce heat to low and simmer 5 minutes. Stir in lime juice and cilantro. Simmer 1 to 2 more minutes so flavors blend.
This recipe yields 4 servings; about 1 cup per serving.
