Carnival's Chocolate Melting Cake

This is an excellent dessert! I got this recipe while on our cruise this summer. I ate it 6 out of 7 nights!

Ingredients

  • 8 oz semi-sweet chocolate
  • 1 cup (2 sticks) butter
  • 1 cup flour
  • 7 eggs
  • 6 tbsp sugar
  • a pinch of salt
  • powdered sugar for garnish
  • vanilla ice cream on the side

Preparation

Step 1

Preheat oven to 375. Grease 6 8oz ramekins with butter or non-stick cooking spray.
Melt chocolate and butter in a pan, cool for 10 minutes.
In a separate bowl, mix 4 eggs with sugar, whisk.
Add four and salt, whisk.
Add remaining 3 eggs, whisk.
Add egg mixture to chocolate mixture, mix until thoroughly combined.
Pour batter into equal parts in ramekins, approx. 1/2 to 2/3 full, cakes will rise.
Bake 10-13 minutes, check with toothpick. Top should be cooked, inside should be melting.
Watch carefully because these will easily overcook if you don't take them out on time.
Sprinkle with powdered sugar and enjoy with a side of vanilla ice cream.
