ALL ARRABBIATA (Penne with Spice tomato sauce)

Ingredients

  • 1/3 c plus 1 T olive oil
  • 1/2 t chopped garlic
  • 3 c whole peeled tomatoes ( I use fresh about 12 roma) with their juice coarsely chopped
  • 1/4 t red pepper flakes
  • salt
  • basil
  • 2 T parmesan

Preparation

Step 1

Put all but 1 T olive oil and garlic in a large skillet over med heat until garlic begins to sizzle.
Add the tomatoes, red pepper flakes and salt. Reduce the heat and simmer until the tomatoes have reduced and separated from the oil 30 - 40 minutes. Toss with pasta, remaining olive oil and cheese.
