Ingredients
- 2 cups Roma tomatoes, diced
- 1/2 red onion, diced
- 1 1/2 New Mexican Hatch chiles, roasted, skinned, seeded and diced
- 1/2 bunch cilantro, chopped
- Juice of 6 freshly squeezed key limes
- Freshly ground black pepper and salt to taste
Preparation
Step 1
Mix all ingredients together in a small bowl. Season with salt and pepper.
Chill.
Makes 3 cups.
