Beef and Vegetable Skillet

Ingredients

  • 1 lb. cube steak
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon minced garlic
  • 1 teaspoon celery salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar (12 oz.) mushroom gravy
  • 1 package (10 oz.) frozen mixed vegetables, thawed
  • 4 corn muffins

Preparation

Step 1

Cut the beef into 1-inch strips, then cut the strips into 1-inch cubes. Heat the oil in a large skillet over medium heat.


Add the beef and garlic to the skillet. Cook, stirring constantly, until the beef is cooked through, about 6 minutes.


Stir in the celery salt, basil, marjoram, salt and pepper. Add the gravy and vegetables.


Cook the mixture over medium heat until heated through, about 10 minutes. Divide evenly among 4 serving plates and top with a split corn muffin. Serve hot.

Instead of topping with corn muffins, toast slices of whole grain bread to serve with this dish.
