Ingredients
- 6 carrots chopped
- 6 stalks celery chopped
- 3 onions chopped
- 1/2 cup (1 stick) butter
- 1 TBS kosher salt
- 2 tsp pepper
- 2 cups chicken broth
- 3 TBS flour
- thawed or fresh turkey

Preparation
Step 1
Soak in brine of one cup kosher salt and one cup sugar (other spices if you want) for at least 10 hours
Heat oven to 350 degrees
place onions, carrots, and celery on bottom of a roasting pan
pat turkey dry with paper towel
mix butter, salt and pepper and then rub that mixture over the outside, in the cavity and under the skin of the turkey
place turkey on top of the vegetables and cook until 170 degrees
remove turkey from roaster and place on platter and cover with aluminum foil
disgard the vegetables and use the juices in the roaster with the broth and flour to make gravey
