Ingredients
- 2 zucchini, cut into 1/4 inch slices
- 2 egg whites
- 1/4 cup Parmesan cheese, shredded
- 1/4 cup seasoned panko bread crumbs
- 1/4 tsp garlic powder
Preparation
Step 1
Preheat oven to 475 degree F or 245 degree C.
In a shallow bowl, combine together breadcrumbs and Parmesan.
Beat egg whites in a separate bowl.
Dip zucchini slices into the egg whites.
Dredge slices in bread crumb mixture.
Turn to coat evenly.
Place on a greased baking tray.
Bake for 5 minutes turning over once at 15 minutes or until browned and crispy.
