Ingredients
- 2 C flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 C butter, softened
- 1 C sugar
- 2 large eggs
- 1 1/2 C mashed overripe banana
- 1 T lemon juice
- 1 tsp vanilla extract
Preparation
Step 1
Measure first 3 ingredients into large bowl. Stir. Make a well in centre; set aside.
Cream butter and sugar in medium bowl. Add eggs 1 at a time, beating well after each addition.
Add remaining 3 ingredients. Stir. Add to ewell in flour. Stir until just moistened. Spread in greased 9x5x3 loaf pan.
Bake in 350F oven for 55-60 minutes until pick comes out clean. Let stand 10 minutes before removing.
