CHILI SAUCE

Ingredients

  • 8 lb skinned ripe tomatoes (4 quarts)
  • 6 medium onions chopped
  • 6 green pepper chopped
  • 1 cup sugar
  • 2 tablespoons salt
  • 3 cups cider vinegar
  • 4 tablespoons whole cloves
  • 3 tablespoons whole allspice
  • 1 tablespoon Tobasco

Preparation

Step 1

Cut tomatoes into eights then combine with onions, green peppers, sugar, salt and vinegar in a large enameled kettle. Tie spices in a cloth bag. Add to kettle ingredients. Cook uncovered about 3 hours, or until quite thick. Stir when needed. Remove spice bag, add Tobasco and pour into hot sterilized jars. Makes about 5 pints.
